  1. Season veal with salt and pepper. Set up breading station: flour, eggs, breadcrumbs.
  2. Dredge veal in flour, dip in eggs, coat with breadcrumbs.
  3. Heat 1/4 inch of oil in a large skillet over medium-high heat.
  4. Fry veal 3-4 minutes per side until golden and crispy. Drain on paper towels.
  5. Toss arugula and tomatoes with lemon juice and olive oil. Season with salt and pepper.
  6. Top each veal cutlet with arugula salad and Parmesan shavings.
  7. Serve immediately with lemon wedges.
