  1. Preheat oven to 425°F (220°C). Pat lamb dry and make small incisions all over. Insert garlic slivers.
  2. Mix olive oil, rosemary, thyme, mustard, lemon juice, salt, and pepper.
  3. Rub mixture all over the lamb.
  4. Place lamb on a roasting rack in a pan. Roast for 20 minutes.
  5. Reduce heat to 325°F (165°C) and continue roasting for 1-1.5 hours for medium-rare (135°F internal temperature).
  6. Let rest for 20 minutes before carving.
  7. Slice and serve with pan juices.
