  1. Preheat oven to 400°F (200°C). Season lamb inside and out with salt and pepper.
  2. Mix garlic, rosemary, thyme, olive oil, and mustard.
  3. Rub herb mixture all over the lamb.
  4. Place crown on a roasting pan, ribs pointing up. Fill center with aluminum foil ball.
  5. Roast for 15 minutes, then reduce heat to 325°F (165°C).
  6. Continue roasting for 1 hour until internal temperature reaches 135°F for medium-rare.
  7. Remove foil ball, let rest 15 minutes. Garnish rib tips with paper frills before serving.
